Joining NANRO Next as a mentor, Chef Si-Woo Sung began as a founding member of Soigné, working his way up to head chef and studying at length under Chef Jun Lee. Today he leads LÉGUME, a fully vegan fine-dining restaurant, as its owner chef. LÉGUME earned one Michelin star in the 2025 MICHELIN Guide.
His vision reaches beyond the plate: interiors and tableware chosen for their plant-based materials, some vegetables grown by his own hand, and food waste returned to the very soil that fed the kitchen — a closed loop as the final destination. It is a sustainability lens that has long shaped his practice, and one he wants to share with younger chefs by joining NANRO Next as a mentor.
